Five blades built the way Japanese knives are meant to be built: a hard AUS-10 Damascus core clad in softer steel, hardened past 62 HRC so the edge stays keen without the blade being brittle. The finish is where this series separates itself. One reviewer described the transition from tang to bolster as seamless and the edge as perfectly uniform from heel to tip. Solid ebony and rosewood handles, each knife in its own natural wood saya, and the sort of set chefs buy after eighteen years of using other people's.
